Missing vegetables? Try these 20 with purpose!
I’ve been craving some pasta lately, so this week when we were planning out our menus, I got out the Italian WW cookbook that I have and went nuts. Literally. I found a recipe called Linguine Crema di Noci. The sauce that you made for the pasta was a pseudo-cream of walnut sauce. Very weird. If you ever come across the recipe, I recommend you stay away (unless maybe you find it on the menu of a authentic Italian restaurant). We were completely underwhelmed.
Because it was a pseudo cream sauce, the points value of the dish was a little higher so I didn’t make anything to go with it. Believe it or not, we were actually missing our vegetables last night. I’m not sure if it’s because the dish was just too unsatisfying, or if the past 4 weeks have really made that much of an impact on us already.
Next time I’ll know, make a big healthy salad to go with it. Or at least throw some kind of vegetable into the dish. I think asparagus would have enhanced this dish, but I’m not willing to try the basic recipe again.
I’ve also noticed that eating all these veggies has helped the way I feel throughout the day. Before the new diet, after eating my lunch of whatever crap I could find in the cafeteria at work, I was always ready for a nap. I just lost all concentration and focus and just physically felt heavy and sluggish.
Since the change in diet, I never get that feeling anymore. I feel like I have more energy and that I can keep going. Though I’ve become a self-declared Foodie over the past 2 years, I never really took into consideration that food had purpose besides satisfying cravings and keeping you alive. I love to taste and experiment with food, but then it was all about the taste.
Now I’m experimenting with what will this food do for me, and how does it taste. Goji berries and adzuki beans. Seeds, nuts and strawberries. They all do something other than just provide nutrition.
